When a craving comes for a little taste of sweetness, these truffles can be whipped up in five minutes for a yummy treat. Simple ingredients make them so easy to prepare: shredded coconut, crunchy almond butter, and honey. Our favorite variety is a creamed raspberry honey from local hives with a flavor that's so mild it doesn't overpower the taste of the truffles. The almond extract imparts a subtle, hidden flavor that takes the truffles to a new level. For the best results make sure the almond butter is fresh.
Ingredients: Makes 10 Truffles 6 tablespoons shredded coconut 4 tablespoons chunky almond butter 3 tablespoons creamed raw honey 1/8th teaspoon Himalayan salt 2-3 tiny drops almond extract, optional Directions Put all ingredients into a food processor or bowl and mix well. With a spoon, scoop out about a tablespoon of the mix, put into palm of hand, and roll into a ball. Repeat process. Arrange on plate, and sprinkle coconut on top. The Little Story: "Make It So"

These are two of my favorite lines from the old TV series, Star Trek, The Next Generation, which carry a level of practical wisdom that can be put to use in every day life. Captain Jean-Luc Picard would often give these commands to his crew, and these words always seemed so clear and decisive—no questions, no confusion.
Recently I've been noticing the differences between "head learning" versus doing. When I learn about something I'm interested in, say juicing, that's wonderful. I've engaged myself in the subject. If I take it to the next step and actually make the juice, I've "made it so". The aspect of being active has brought a new level of health, and a better way of living. The difference between head knowledge and the wisdom that comes from engaging the body in a process is that everything changes. Insights and understanding come that weren't there before. Without the doing part, I'm living in my head—wishing, thinking, wanting, planning, or dreaming, and not bringing the idea into physicality where completion thrives. The body is built for doing. Our minds are created for thinking and contemplating; emotions allow us to feel; and Soul connects us to our deepest spiritual center. To live a complete life all aspects are needed and are good. Through engaging and doing, positive changes can occur for the body-mind-spirit which benefits not only myself, but the planet and those around me as well. With this in mind, I aim to engage and make it so, each and every day. |
