The Humble Path: Green Life

There is a part of us that longs to be great, to excel, to do our best. We are finding that this is often balanced by the humble path—to be grateful, and to be of service in the little ways. Ellie tending her garden What better expresses this state of being than the tender blades of wheat grass or the sweetness of seeing my friend, Ellie, working in her garden? Greens, the color of life, when eaten, flood the body with energizing minerals, vitamins, phytonutrients, life enhancing enzymes, and cleansing chlorophyll.

We could spend weeks on greens! Here's one of our favorite salad recipes.

Green Feast Salad
Ingredients:
2 cups mache or spring greens
1 avocado
1 green onion
1 cup jicama
1 cup zucchini "angelhair pasta"
Directions:
Green Life Salad Rinse all greens thoroughly in cold running water.
Drain, and pat dry. Tear into bite-size pieces.
Divide greens, and place half on each plate.
Cut zucchini into 2 three inch segments.
Put segments into Saladacco on angelhair "pasta" setting.
Turn handle until enough "pasta" is made.
Cut into smaller lengths.
Divide zucchini in half and place over greens.
Peel jicima, and grate.
Peel and slice avocado.
Lay pieces attractively around greens and zucchini.
Finely chop green onion, and sprinkle over salad.
Sweet Mustard Dressing:
This dressing goes beautifully with the salad:
Ingredients:
1/4 cup mild oil
2 tablespoons apple cider vinegar
1 tablespoon stoneground mustard
1 tablespoon agave nectar, or to taste
1/4 teaspoon Himalayan salt
Mix until smooth and satiny.

A Little Story: More on The Humble Path
Green Life Grass We have found that when we first got into the raw food diet, we started to come alive! We'd read about the diet for years, had worked with eating 70-90% raw for about five years, and even tried going 100% raw for a week at various times with excellent results.

Yet after a few months of eating 100% raw, Rex and I started to feel like we were literally growing from the earth! We had become an extension of the living planet, because we were eating food—like any other creature in the wild—in its natural state, the way that the sun and the earth had "cooked" it!

We've read and been touched by what Storm wrote in The Garden Diet, that when we start to eat this way, we "get to go back to the garden". This became a truth for us, and with it came a whole new consciousness of how to live in the world, protect the environment, and heal our bodies, all at the same time. Every moment is witness to a miracle.
