Raw Garlic-Cilantro Corn
Fresh raw corn is one of summer’s great pleasures and this recipe is sheer simplicity that packs awesome flavor and deliciousness! And, it’s so easy to make—simply cut raw corn off the cob and mix in a few sundried tomatoes, black pepper, cilantro, and garlic, and warm to make a mouth-watering dish.

Raw Corn It’s so satisfying that we eat this as a stand alone meal—and it can be teamed with salads or other dishes for raw food feasts. This would be a great dish to introduce someone to raw food!

Ingredients: Makes two whole meals, or four smaller servings
4 ears fresh white corn. The fresher the better. This will ensure ultimate flavor, kernels that are crunchy and tender but not tough, and juiciness—hallmarks of really good corn.
6-8 sundried tomatoes—our favorite is Jeff’s Naturals Sun Ripened Dried Tomatoes
4 tablespoons finely sliced green onion, or Vidalia, or Walla Walla onions
12 leaves cilantro, minced
1-2 cloves garlic, depending on size, pressed
1/4 teaspoon freshly cracked black pepper
4 tablespoons water, and 2 tablespoons of your favorite oil for heating the corn in a frying pan.

Optional Ingredients: Coconut Aminos for low-sodium salty taste, and a dash of chipotle for fiery heat.

Directions: Cut corn off cob. Transfer to large frying pan.
Cut sundried tomatoes into small pieces.
Thinly slice green onion—you’ll want about 4 tablespoons.
Press garlic and mince cilantro.
Put tomatoes, green onion, cilantro, garlic, freshly cracked black pepper, water, and oil in the pan with the corn.
Warm to desired temperature, stirring constantly to not cook. Use your finger to determine temperature.
Serve immediately, and drizzle on a little Coconut Aminos if desired.

The Little Story: Energy Healing

Recently we’ve been focusing on energy for healing in the forms of breathing nourishment, homeopathic remedies, acupuncture, and living food. The combination of all of these has been wonderful.

Janet on Trail For anyone with low energy, acupuncture has worked amazingly well for millions of people. I had not been able to regain my energy after a terrible tooth infection from two summers ago, and in January of this year, acupuncture turned the tide.

I met a woman at a spiritual seminar and we got to chatting, and as the way things often happen, the conversation came around to healing. It turned out she was an energy healer and an acupuncturist, and she explained to me after I told her my story, that I probably had what is termed "depleted spleen energy". Her recommendation was to find a good acupuncturist to help balance this. I was amazed and tearfully grateful that in a room filled with 8,000 people, this woman and I found each other, and she brought me the information I needed.

Back home from the seminar, an skilled acupuncturist was recommended, Michele Siemion. I liked her immediately. She looked like an angel with a halo of golden, curling hair around a smiling and joyful face with bright blue eyes. I had to get over my fear of needles and then settled in for my first treatment. I was surprised at the reaction to the tiny pricks—some felt completely fine, others caused me to jump, as deep energy connections were made. Michele was compassionate and attentive. I surrendered to the treatment, and to my amazement I could feel the shifts taking place right away.

Daily practice of deep breathing and sun nourishment have brought another boost. And homeopathic remedies for blood, lymph, teeth, and the GI tract have been adding additional energy healing that we use in combination with specific herbs, along with our cleansing, nourishing, raw food diet.

Letting go of mental and emotional agreements to beliefs, memories, conditions, and past events, is another form of healing that is bringing in yet more light and energy. This is something I can do every day through conscious, honest, inner communication with myself, and others. I see it as a practice of spiritual house cleaning. We carry around so much that is not needed anymore, but continues to influence us on many levels. This kind of deep release is available to all of us, as the breath restores every living being moment by moment. Such is love in abundance.
