Sprouted, Dehydrated Almonds
Rex and I recently discovered that we can soak and dehydrate almonds to produce a texture much like their roasted cousins. No oily, overly salty almonds here—these are lighter and more delicate than plain raw almonds, and yummy to bite into for a satisfying crunch! By cutting the almonds in half, the drying time is reduced to just a few hours.

Sprouted Dehydrated Almonds The soaking process nullifies the enzyme inhibitors (not good for humans in large amounts) that are present in the nuts, and brings out the natural sweetness. Cutting the nuts in half took us about five minutes to do. Without cutting, the drying time takes much, much longer!

These dried almonds make a great garnish for salads or veggie dishes.

Ingredients:
2 cups raw almonds*
4-6 cups pure water
Salt, spices

Directions:
Soak almonds overnight (or for 8-10 hours).
In the morning rinse and drain.
Chop in half, and place on dehydrator sheets.
Turn temperature to 110 degrees for several hours.
Add salt and create your favorite seasonings. Try any of the following: cayenne, black pepper, chili spice, curry, or a touch of honey, and enjoy!
Store in the fridge in mason jars.

*Some sources for unpasteurized almonds are Trader Joe’s, Raw Food World, and Natural Zing. Some health food stores carry truly raw almonds—be sure to ask.
