This refreshing juice, made with carrots, tomatoes, celery, and cucumber, is delicious to drink plain, and also makes an awesome base for gazpacho soup. Add finely minced onions (green, or mellow sweet), additional chopped tomatoes, cucumbers, bell pepper, celery, spices, garlic, maybe a pinch of cayenne pepper, a little olive oil, and so forth. Sliced avocado makes a nice companion side dish for the soup.
Both the juice and the soup are easy to prepare, and we enjoy them so much! Serve chilled, or warmed. Ingredients: (Makes 4 cups) 5-6 carrots, depending on size 2 medium large tomatoes 1/2 head celery 1 medium cucumber Directions Scrub or peel carrots if necessary, and rinse tomatoes, celery and cucumber. Peel cucumber, if skin doesn't agree with you. Depending on your juicer, chop veggies to fit juicer, or put in whole (a Breville juicer). Juice, and enjoy. If using a Vitamix, blend all ingredients with about a cup of water, strain, and serve. The Little Story: Good Things That Last
Health practices have been around since time immemorial, and they've stayed around because they work. They've worked in the past, they continue to work now, and I'm sure they'll work well into our future. The list is short: fresh whole foods, pure water, herbs, exercise, meditation or contemplation, sunlight, deep breathing, detoxification and fasting, peace, compassion, and love. These are practices of high quality, and as long as Rex and I follow the simple rules of health, we stay on track.
While thinking about writing the Little Story, Rex and I sat on a bench by Padden Lake. It was the anniversary of the day we first met so many years ago. Our relationship has been a blessing beyond words, another good thing that's lasted. I looked at the beauty around us, and saw sun reflections like quicksilver on the lake. A fish jumped, a duck dove under the water looking for food, and water lapped near our feet in tiny wavelets. The sound of wind was in the trees, and it felt like a timeless moment in eternity. A kind of moment that's been around forever, a breath from the creator, a good thing indeed. |
